layered cheesy eggwhites (microwave) with hollandaise (whisked yolks, lemon juice, salt); my makeshift-double boiler - was constantly adjusting the temp (gas is great for that) while I timed the 'full outcome', further prep I need to do etc... basically got the bottom of the bowl a little hotter than enough to melt the butter I needed to fold in at the end.. plated and served
