Perfect Scrambled Eggs with Wilted Spinach + Cracked Black Pepper, and Italian Toast

the eggs were lightly scrambled in milk, then added to a medium-temped frying pan of butter+milk

when the milk started to boil, I slowly added the eggs, waited for it to start boiling, then slowly dragged a plastic fork across the eggs, x-axis, then pause, then y-axis, while slowly reducing the heat to 0

bowled-and-salted, pan cleaned, then spinach was done with cracked black pepper + olive oil

and a side of buttered italian toast.
